Sup Kepala Ikan Merah

Acu cuba try recipe ni if you like. dalam my blog "royaltlady. blogspot. my"
ada gak resipi sikit2 and link to one French Lady's blog who always
organises a culinary class...jengok lah.

Sup Kepala Ikan Merah (red snapper or garoupa also can) BUT ini version I
sendiri lah...

1 big red snapper head (halves, clean)...can add 2 pieces extra flesh if you
like
Water just enough to cover the fish ( may add more if you prefer)
4" Ginger - crush
6 garlic - slice
2 medium sized onions - sliced
2 ' cinnamon sticks
2-3 bunga lawang - star aniseed
4 cardamoms
4 cengkeh
black pepper -crush
1 teasp corriander - crushed
Olive oil
corriander leaves or leek
Salt to taste

1. Slightly heat olive oil. Add all ingredients except water and fish head.
2. When slightly brown (not burnt like I was famous for in Mrs. Kanaberan's
cookery class), add fish turning gently few time till it changes color.
3. Add sufficient hot water. Leave to simmer for 15 minutes or slightly
longer.
4. Add leek or chinese cabage...then corriander leaves.
****if you like tastier soup, do not add fish as in no.2. BUT, after no.1,
boil and simmer for half an hour with fish bones (ikan apa2 lah) to get all
the goodness from it all. NEVER use seasonings other than salt.
5. May eat with oats instead of rice or as main meal with other veges of
your choice.
